Composition
The bark contains 5 to 15% total quinoline alkaloids (average 6 to 10% of which 30 to 60% are quinine-type alkaloids)
that consist mainly of quinine (1 to 3%), quinidine (0 to 4%) and their respective 6?-demethoxy derivatives, cinchonidine (1.25 to 8%)
and cinchonine (2 to 8%) (CoE, 2000).
Taste threshold values
Taste characteristics at 0.1%: bitter, astringent, maple, brown tea and woody notes.
