Beschreibung
3-Octanon-l-ol has a fruity, herbaceous, spicy odor and a slightly
bitter taste above 20 ppm. Otherwise, it is warm and fruity. It may
be prepared by partial hydrogenation of the corresponding diketone
at 100°C over Raney-Ni in methanol solution; also by
condensation of methyl amyl ketone with formaldehyde under
mildly alkaline conditions.
