ChEBI: Disodium fumarate is an organic sodium salt resulting from the replacement of the protons from the carboxy groups of fumaric acid by sodium ions. It has a role as a food acidity regulator. It contains a fumarate(2-).
| [Preparation]
Disodium fumarate is obtained by neutralizing fumaric acid with sodium carbonate. Heat the water to boiling, and add fumaric acid while stirring. Add sodium carbonate in portions to pH=6.5-6.7. Stir well and filter while hot to obtain sodium fumarate solution. |
