L-malic acid: Solubility and Benefits

L-malic acid is an essential natural organic acid, widely distributed in plant, animal and microbial cells, and its taste is close to that of natural apple. In 1967, it was registered as a safe, non-toxic, harmless, edible organic acid in the United States Food and Drug Administration. L-malic acid is a tetracharonic acid. All malic acid in nature is L-malic acid.
Solubility
The high solubility of L-malic acid was confirmed by the test done from 10 °C to 55 °C. At room temperature, it was possible to solubilize 50.11%, or 5.011 g in 10 mL of water, which corresponds to 3.73 mol kg?1 of water, superior to citric acid (around 3.13 mol g?1 of water at same temperature).
