Description：Homoglutathione是glutathione同系列的多肽，序列中含有三個(gè)氨基酸，是一種小分子多肽。Homoglutathione也是一種味覺修飾多肽，和-Glu-Leu 及 γ-Glu-Val 一起形成"厚"味(“kokumi” flavor)。含有親電中心的殺蟲劑在豆科植物中可以通過(guò)與homoglutathione或者谷胱甘肽(glutathione)的結(jié)合被代謝。
Homoglutathione is a peptide of the same series as glutathione, which contains three amino acids in its sequence and is a small molecule peptide. Homoglutathione is also a taste modifying peptide, along with Glu Leu and γ- Glu Val together forms a "kokumi" flavor. Insecticides containing electrophilic centers can be metabolized in leguminous plants by binding to homoglutathione or glutathione.
