Introduction:

4-methyl-5- (beta hydroxyethyl) thiazole can be obtained by reduction reaction of 4-methyl-5-ethyl acetate with lithium aluminum tetrahydroxide. Alternatively, the desired product can be obtained by cyclization of α - chloroacetyl propanol with thioformamide, followed by reaction with hydrogen peroxide. 

According to GB2760-96, 4-methyl-5-hydroxyethyl thiazole is temporarily allowed to be used as a food flavor. It can be used as a essence for beverage, candy, baked food, ice cream, dairy products, chemical books, seafood flavor, chicken flavor, meat juice, soup, beef dairy products, cereal products and other foods.
