Locust bean gum, also known as locust bean gum, is a plant gum made from the seeds of the locust tree grown in the Mediterranean. It is white or slightly yellow powder, odorless or slightly smelly. In the food industry, it is mainly used as a thickener, emulsifier and stabilizer.

Application 
1. The combination of locust bean gum and carrageenan can form elastic jelly, while carrageenan alone can only obtain brittle jelly.
2. Locust bean gum, seaweed gum and potassium chloride are widely used as a compound gelling agent in pet cans.
3. The compound of locust bean gum/carrageenan/CMC is a good ice cream stabilizer, the dosage is 0.1-0.2%.
4. Locust bean gum is also used in dairy products and frozen dairy products as a water-holding agent to increase the sense of import and prevent the formation of ice crystals;
5. Used in cheese production can speed up the flocculation of cheese, increase output and improve coating effect (amount is 0.2-0.6%);
6. Used in the processing of meat products, Western-style sausages, etc. to improve water holding performance, and to improve the tissue structure and freezing/melting stability of meat;
7. It is used for puffed food, imparts lubrication during extrusion processing, and can increase output and extend shelf time;
8. Used in flour products to control the water absorption effect of the dough, improve the characteristics and quality of the dough, and extend the aging time.
