Albumin is a type of protein. Proteins, based on
solubility, are classified as albumins (water-soluble),
globulins (water-insoluble but soluble in salt solutions),
and prolamines (soluble in alcohol-water mixtures).
Albumins can be coagulated by exposure to heat.
